Wharfs and pastel sun

Yesterday on my lunch break I took a walk along the Petone waterfront and then down the Wharf. Warm sun, salt air, gentle breeze and a good chance for some photos.




Then on the way home the sunset was pastel and pretty so took some shots in the same place I took them yesterday morning.

Sunsets and Birthdays

Thought I would share some photos that I have taken recently.

I am only new to photography, but if anyone has advise, tips, tricks, recommendations, suggestions, please let me know.

I am using a Panasonic Lumix FZ35 camera.

Greys Road 18th April 2016 – tried a few different shots, not 100% sure that I like how they have turned out.



Greys Road 19th April 2016 – going to work and seeing a view like this, how could I not stop for some shots.



My Nieces 1st Birthday Party – these photos are so much harder! Most of the pictures were of my 3 nieces and family, but since they aren’t my kids and I haven’t asked consent to post their faces on-line I will stick to these shots. I have my other Nieces 1st birthday in a few weeks so any tips on how to shoot these types of shots and how to get the right composition for things like table set up, cake etc PLEASE PLEASE PLEASE leave a comment!!!

Quick update

So I have this blog, have had it for a while and not really done much with it. Same goes for my associated facebook page…

Just wanted to post a quick update as I have taken the facebook page in a new direction and am likely to do the same with this blog.

The plan is to keep posting general blog stuff (life, recipes, etc) but mainly it will be to share photos that I take.


We have our honeymoon coming up in October and I want to be able to take some decent picture so I am learning a bit about Photography and want to share the pictures that I am taking as I learn.

I have already posted some on Facebook but will try to share some here as well.

Exciting news!

Right, I have been absolutely terrible at doing anything on here! But I have something that is worthy of any update…



19 months ago the love of my life asked me to marry him and on Saturday 13th February 2016 (the day before our 6 year anniversary) we took the plunge, we became husband and wife.


The night before we all snuck out for a quick drink. (Well sick turned into about a few more drinks)

The day was amazing! I know it’s clique but it was perfect, it couldn’t have gone better.

I mean the venue, the food, the cake, the people…


Look at this place, who wouldn’t want to get married in front of this backdrop?



This took me by surprise, and clearly looking at this photo I wasn’t the only one who was surprised.

This was not planned! As we were taking photos two horses came down the drive and the rider was kind enough to spear him for a photo. What a cutie!


One of my favorite shots of the day. It was so funny watching this photo unfold!


Valentine’s Day / our 6 year anniversary the following day.

The new hubby surprised me with this , chocolates champagne, strawberries… So sweet!  Oh did I mention the view in the other direction?


And then we had some more wine


And then a bit more wine. By the time we went inside (around 1.30am) this was she view


There were so many amazing people who helped us with the day and I will give them all a shout out in a separate post.

Better than a brought Big Mac

Hi guys,

So I recently watched a video on YouTube to make a home-made big mac and decided to give it a go at home, it tasted so good that I had to share it!!

The actual recipe was for a vegan Big Mac, personally I opted for vegetarian but you could easily make this with meat by simply switching out the patties.

This recipe was courtesy of Candice from the Edgy Veg (check out the original recipe here)



Big Mac Ingredients:

2 buns (you will need the second to make the middle bun)

2 patties of your choosing (I opted for the Peri Peri Linda McCartney Vegetarian patties – ps these are awesome!!)

Big Mac Sauce (Recipe below)

Finely diced onion (the finer the better!)


Lettuce diced (McDonalds use iceberg)



Cook your patties according the manufacturer’s instructions

Finely dice your onion

Dice your lettuce and set aside

Make your Big Mac Sauce (recipe below)

Slice one bun in half and slice the top and bottom off of the second bun, you should end up with a piece of bun about the same thickness as your other two buns but with an open top and bottom.

Toast your buns lightly, don’t forget to toast both sides of your middle bun

BIG MAC SAUCE – Ingredients:

½ cup mayo

2 tablespoons French dressing (in NZ our French dressing is much different to that used in this recipe so I used the ETA dressing and added 1.5 teaspoons of bbq sauce and opted to not add the vinegar as the nz French dressing was already acidic)

4 teaspoons sweet pickle relish

1 tablespoon finely chopped onion

1 teaspoon sugar

Tiny pinch salt to taste


Mix all ingredients together in a small bowl

Assembly order.

  1. Bottom bun
  2. ½ tbsp big mac sauce
  3. ½ tsp onion
  4. ¼ cup lettuce
  5. Vegan cheese
  6. Veggie burger
  7. Middle bun
  8. ½ tbsp big mac sauce
  9. ½ tsp onion
  10. ¼ cup lettuce
  11. pickles
  12. Veggie burger
  13. Top bun

Molton Lava Chocolate Cakes



115g chocolate (milk or dark depending on how sweet or rich you want it)

2 tablespoons butter softened (plus extra to grease dish)

2 tablespoons sugar (plus extra to coat dish)

2 eggs

2 tablespoons plain flour

Additional chocolate for filling

Peanut butter

Preheat oven to 160 degrees

melt chocolate

In a seperate bowl cream butter and sugar

Add eggs and beat

Add flour and lightly beat

Fold in half the melted chocolate and then the other half – don’t over mix.

Grease two ramikins with butter, dust with sugar (add a couple of tablespoons and swirl dish around to coat)

Add 1/4 mix to each ramikin, add a scoop of peanut butter and chocolate chips

Add 1/4 mix on top of each and slightly smooth

Cook for 15 mins or until surface is firm and a skewer in side comes out clean.
This recipe makes two smallish cakes. I prefer to double this mixture for slightly larger cakes

Dream Bar Slice

This is my childhood on a plate!


Melt 1/2 cup butter then take off heat and add 1/4 cup sugar, 1 beaten egg and 1/3 cup unsweetened cocoa

Return to low heat and stir constantly until thickens – 1 to 2 mins

Stir in 1 teaspoon vanilla, 2 cups crushed plain biscuits and 1 cup shredded coconut

Press into a greased dish and pop into freezer

Beat 1/4 cup soft butter until creamy

Add 4 heaped tablespoons of custard powder, 2 cups icing sugar and 3 tablespoons milk or cream

Beat until smooth and spreadable.

If its not spreadable add a splash more milk

Spread over base and return to freezer


Melt 1/4 cup butter

Add 1/2 cup cocoa and 1/2 cup icing sugar

Beat and add water slowly until smooth and creamy.

Add more equal amounts of Cocoa and icing sugar until you have desired amount of icing.

Spread over base and add sprinkles

Place in fridge until set.
